Cauliflower Pizza Crust

  • 1/2 Head Cauliflower coarsely chopped
  • 1/2 cup grated parmesan cheese
  • 1 Egg Or egg substitute equivalent
  • 1 tsp minced garlic
  • Salt & Pepper
  • Extra Virgin Olive Oil
  • Shredded Mozzarella
  • Tomatoes sliced
  • Basil chopped


  • Using your food processor, chop all of the cauliflower down to a fine powder.
  • Microwave the cauliflower for approximately 10 minutes.
  • Using a tea towel, squeeze out all excess liquid from the cauliflower. The dryer your mixture, the crispier your crust!
  • Place the cauliflower in the fridge to completely cool. This takes about 15 minutes.
  • Preheat your oven to 450 degrees
  • Remove the cauliflower from the fridge and mix in the parmesan cheese, egg, garlic, and salt and pepper to taste. Hands work best for this step; you’re creating a ball of dough! 
  • Press and shape the dough mixture onto a pizza stone or baking sheet and bake for 15-20 minutes until it’s golden brown.
  • Top with olive oil, cheese, tomatoes and basil
  • Place back into oven until cheese is melted, about 5 minutes, and enjoy!
