Fresh Caprese Pasta

  • 1 box Barilla Whole Grain Pasta
  • 3 tbsp olive oil
  • 1/2 c small yellow onion very, finely chopped
  • 2 tsp mined garlic
  • 2 1/2 c cherry tomatoes halved or quartered
  • 1 jar your favorite marinara
  • 1/2 c fresh basil thinly sliced or chopped
  • 3/4 c ¬†mozzarella cheese chopped into small pieces
  • 1/2 c Balsamic
  • 2 grilled chicken breasts, sliced
  • salt and pepper to taste, optional


  • Cook the pasta according to package directions.
  • Meanwhile, heat the olive oil in a large nonstick skillet on medium-high heat. Add onions. Cook and stir until translucent. Add in the garlic and stir until fragrant. Add cherry tomatoes and cook for about 5-6 minutes, stirring occasionally. Then add the Barilla Marinara and chicken stock. Let simmer for about 6 minutes and add half of the fresh basil.
  • Drain the pasta and toss with the tomato mixture.
  • Season with additional salt and pepper if desired. Add in the mozzarella cheese, the remaining chopped basil, chicken and drizzle balsamic vinegar over the top.
  • Enjoy immediately.
