Preheat oven to 350 degrees.
Cream the butter, egg, vanilla and sugar until well blended.
Slowly add the baking powder and the flour 1/2 cup at a time and let it mix in before adding more.
Roll dough into 1 inch balls, dipping into the coconut before placing on the baking sheet.
Press your thumb into each dough ball.
Spoon a small amount of jam onto each cookie.
Bake for 16 minutes or until the bottoms start to brown and the coconut starts to toast.
