Blackberry Coconut Birds Nest Cookies


  • 3/4 c of Butter
  • 1 large Egg
  • 2 tsp vanilla Extract
  • 2/3 c Sugar
  • 2 c Flour
  • 1/3 tsp Baking Powder
  • 1 1/3 c shredded coconut
  • Blackberry (or any fruit flavor) Jam


  • Preheat oven to 350 degrees.
  • Cream the butter, egg, vanilla and sugar until well blended.
  • Slowly add the baking powder and the flour 1/2 cup at a time and let it mix in before adding more.
  • Roll dough into 1 inch balls, dipping into the coconut before placing on the baking sheet.
  • Press your thumb into each dough ball.
  • Spoon a small amount of jam onto each cookie.
  • Bake for 16 minutes or until the bottoms start to brown and the coconut starts to toast.
