The World’s BEST Blueberry Pancakes!
Breakfast is the favorite meal at our house! Every Saturday and Sunday, my toddler and I roll out of bed, into the kitchen, and make a hot breakfast together. One of the biggest hits is homemade blueberry pancakes! I’ve tried so many pancake (and waffle) recipes, you wouldn’t even believe it. With tweaking and adding just the right amount of the ingredients, I’ve finally perfected the blueberry pancake. We’ve had these two weekends in a row now and every last bite of the batch is devoured!
Ingredients:
- 1 1/2 cups of flour
- 3 1/2 teaspoons of baking powder
- 1 tablespoon of white sugar
- 1 teaspoon of salt
- 3 tablespoons of melted butter
- 1 egg
- 1 1/4 cups of milk
- 1 – 1 1/2 cups of blueberries (if frozen, thaw first)
- cooking spray
Step 1:
Heat up your pan with medium-high heat on the stove. Mix together all the dry ingredients first. Then add melted butter, egg and milk. Mix.
Step 2:
Add the blueberries. Mix.
Use butter or cooking spray to coat the pan and add the pancake batter. I use a soup ladle to make the perfect sized pancakes. When you see the pancake start to have bubbles, it’s time to flip it over!
Add syrup and enjoy!
