ST. PADDY’S DAY SNACK

Everyone’s Irish on St. Patrick’s Day! Make this festive, kid-friendly feast for tots who aren’t quite ready to take on classic corned beef and cabbage, and certainly not ready for a Guiness!
Kiddie Reuben
Ingredients:
- 1 whole-grain English muffin
- 2 slices corned beef (ask for it thinly sliced at the deli)
- 1 tablespoon Thousand Island dressing
- 2 slices Swiss cheese
Instructions:
1. Toast muffin until golden brown.
2. Spread Thousand Island dressing on each side, place corned beef and cheese on top.
3. Melt cheese in microwave for 20-30 seconds.
4. Serve with a side of carrot fries and Shamrock Smoothie (below).
Shamrock Smoothie
Ingredients:
- 1 banana
- 1 kiwi
- ½ cup vanilla yogurt (don’t use Greek, it will be too sour)
- 1 tablespoon honey
- ½ cup crushed ice
- green food coloring
Instructions:
Blend all ingredients together in blender until smooth. Add a few drops green food coloring for a festive St. Paddy’s touch!
