My mom made these scrumptious scones over the holidays, and they were a big hit with the whole family. Eat them hot out of the oven topped with apple butter (as shown in photo). Serve with fruit and you have the perfect weekday breakfast!

Ingredients

  • 2 cups flour
  • 1/3 cup brown sugar
  • 1/2 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 1 t. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup cold unsalted butter cut into pieces
  • 1/3 cup dried cranberries
  • 1/4 cup toasted pecans
  • 1/2 cup pumpkin
  • 1tsp. vanilla
  • 1/2 cup buttermilk
  • Egg wash (1 egg mixed with 1 tablespoon milk)

Directions

  1. Preheat oven to 400 degrees. Line baking sheet with parchment paper.
  2. In a large bowl, whisk together dry ingredients.
  3. Cut in the butter (like with pie dough). Mixture should be coarse.
  4. Stir in the cranberries and nuts.
  5. Mix together pumpkin, vanilla and buttermilk.
  6. Add pumpkin mixture, mix just until dough comes together.
  7. Transfer dough to a lightly floured surface and knead gently four or five times.
  8. Pat the dough into a circle that is about seven inches round and 1 1/2 inches thick.
  9. Cut this circle in half then cut each half into four pie-shaped wedges.
  10. Place the scones on baking sheet and brush with egg wash.
  11. Bake for about 20 minutes or until golden brown.
  12. Transfer to a wire rack to cool.  Makes 8 scones.
