Try these fun cocktail pops for a fun mother’s day treat. And yes, the roses are edible! Just be sure to use roses that haven’t been treated with chemicals—organic is the way to go with these flowers! They actually can vary in taste from strawberries to green apples depending on the color you choose.

I was a little leery of the idea of eating roses, but they were delicious! I used red roses, and they tasted like strawberries to me—a perfect combination with Prosecco.

 

These would not only be perfect for a mother’s day brunch, they would be fab for a swanky rooftop party or a fun girls night in. And they’re bound to be a hit with anyone who likes Prosecco!

Don’t have any organic roses on hand? You could also tweak these by adding sliced strawberries or raspberries instead of the roses.

INGREDIENTS:

  • 1 ½ cups white grape juice
  • 1 cup cold, flat Prosecco
  • 2 teaspoons lemon juice—freshly squeezed
  • 1 organic rose (petals plucked and rinsed)
  • 6 wooden popsicle sticks
  • 6 popsicle molds

INSTRUCTIONS:

Step 1. Combine white grape juice, Prosecco and lemon juice in a small bowl.

Step 2. Fill popsicle molds 1/3 way full. Drop in a couple of rose petals into each mold and freeze for 30 minutes.

Step 3. Fill the molds another 1/3 way full and place a couple more rose petals into each one.  Freeze another 30 minutes.

Step 4. Stick the popsicle sticks into the slightly frozen pop (they will go in easily because it won’t be completely set yet). Fill the molds the rest of the way full and put a couple more rose petals into each one.

Step 5. Freeze for six to eight hours. When you’re ready to serve, run warm water over the molds and popsicles will come out easily. Enjoy!
