This is my new go-to recipe for a quick and easy salsa. Not only is this salsa perfect for entertaining, you can use the leftovers to serve it on top of grilled chicken for a light and refreshing summer meal!

Ingredients: 

    • 3 ripe tomatoes (chopped)
    • 3 cups fresh pineapple (chopped)
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons chopped basil
    • Salt and pepper to taste

Directions:

Step 1.  Combine all ingredients in a medium bowl.

Step 2.  Chill for one hour before serving
