My garden is just bursting with basil right now! With lots of basil on hand, I LOVE to make homemade pesto. I love to make a big batch of it and then freeze (pesto freezes great in ice cube trays) so I have pesto on hand all winter long!

Ingredients:

  • 3 cups basil leaves
  • 1 1/2 cups pine nuts
  • 4 tsp. minced garlic
  • 1-cup olive oil
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions:

Step 1:  Place basil leaves, pine nuts and garlic in a food processor and pulse until finely chopped.

Step 2:  While processing, slowly add one-third cup olive oil.

Step 3:  Add 1/3 cup grated Parmesan cheese and mix in processor.

Step 4:  Add salt and pepper to taste.

This recipe makes 16 servings; I always make a big batch of it and then freeze (pesto freezes great in ice cube trays) so I have pesto on hand all winter long!

  • 1-cup olive oil
  • ¾ cup grated Parmesan cheese
  • Salt and pepper to taste
