Spring is here, and along with Easter baskets and bunny rabbits comes a new season of vegetables. One of my favorites that usually makes its way to the Easter-dinner table is asparagus.
Unfortunately, kids are traditionally not huge fans of this particular veggie. Never fear, I’ve created a super easy snack that will have your kids eating asparagus right along with the adults this Easter!
Ingredients
- ¼ cup low-fat cream cheese
- 2 stalks asparagus, cooked and diced
- 3-4 slices deli ham
- 1 medium-size whole wheat or whole grain tortilla
Directions
Step 1: Mix cream cheese and asparagus together.
Step 2: Warm tortilla in microwave for 10 seconds to make it more pliable. Spread cream cheese mixture over it.
Step 3: Lay ham over cream cheese and roll tortilla up. Slice into one-inch pinwheels.
What a yummy sounding sandwich! Definitely going to try this!
I made these today for a baby shower, but before adding the chopped asparagus, I whipped the cream cheese with fresh lemon juice and some grated parmesan-reggiano cheese. Yum! Thanks for the recipe!
