I was first introduced to this recipe in college. I loved it from the first bite and it still remains in heavy rotation at our house. I’ve seen many variations on it over the years, but this recipe remains my favorite.

Ingredients:

  • 1 lb. chicken breasts (cooked and diced)
  • 1 tube crescent rolls (I use reduced fat)
  • 4-5 oz. cream cheese
  • 3 tablespoons milk
  • ¼ cup diced onions
  • One small jar diced pimentos (about two tablespoons)
  • 2 tablespoons melted butter
  • Breadcrumbs (I use Italian-style for more flavor)
  • Salt and pepper

Directions:

  1. Preheat oven to 350.
  2. In a medium-sized bowl, mix together cooked chicken, cream cheese, milk, onions, pimentos, one tablespoon of butter and salt and pepper to taste. NOTE: Sometimes I may have more or less chicken then called for so I have to adjust the milk and cream cheese a bit.
  3. Unroll crescents and place on baking sheet in squares (keep two of the triangles together and press perforated part together). You will have four squares.
  4. Divide chicken mixture evenly into squares. Fold corners of squares up over top of mixture and twist together.
  5. Brush remaining tablespoon of melted butter over tops of squares and sprinkle with breadcrumbs.
  6. Bake for 25 minutes or until tops of crescents are golden brown.
