If you’re anything like me, you struggle to come up with new ideas to make for dinner. My meal planning is usually on a pretty steady rotation of chicken with veggies, spaghetti, chili, and breakfast for dinner. So sometimes I need to find new ways to get my kids to eat dinner without a fight. These barbecue chicken biscuit waffles are super easy and super fun.
Start by preheating the oven to 350 degrees, turning on the waffle iron, and opening a can of biscuits (or, if you prefer, you could make your own dough. That part is up to you!)
Once the waffle iron is heated up, place a biscuit in the middle. Close the iron and cook for 2-3 minutes.
If all goes according to plan, you should end up with this:
Repeat 7 more times, and put your biscuit waffles on a couple of foil-lined pans.
If your mind wasn’t already blown by putting biscuits in your waffle iron, then it might be after this part. Take a pound (I don’t think I used the whole pound, so leftovers could work too) of cooked chicken, and pop it in a stand mixer. If you don’t have a stand mixer, you can shred it with forks, but it’s not as much fun. Use your paddle attachment, and add a squeeze of your favorite BBQ sauce. Turn it on slow/medium, and watch it to make sure you don’t get chicken mush, and then…
…voila! Perfectly shredded chicken.
Now it’s time for assembly. This is a good chance to let your kids help with dinner. Put the shredded chicken and some shredded cheese on top of the biscuits.
Pop these bad boys into the oven for about five minutes, or until the cheese has melted.

Top with a drizzle of ranch and some green onions (maybe skip the latter if you have picky kids), and enjoy!
- 1 lb cooked chicken
- 1 can refrigerated biscuits
- ¼ cup (ish) of BBQ sauce
- 1c shredded cheese
- Ranch dressing
- Green onions
- Preheat oven to 350 degrees.
- Open biscuits and place them in the center of a hot waffle iron, one at a time, for 2-3 minutes.
- Arrange biscuit waffles onto foil-lined cookie sheets.
- Shred chicken and add desired amount of barbecue sauce.
- Put app. ¼c of chicken onto each biscuit and top with shredded cheese.
- Bake for 5 minutes, or until cheese melts.
- Top with ranch dressing and green onions.
