A couple of years ago my husband and I stumbled upon this little restaurant in St. Helena, CA. It was our anniversary and we were on the hunt for a new place to eat. While browsing the area on my Yelp app, we saw high ratings for AKA Bistro. Everyone raved about their avocado fries among other things so we knew that is where we would enjoy our anniversary dinner. Everything was incredible but the avocado fries were like nothing else we had ever had before. We are both huge avocado fans and had never thought about making them into “fries”. Since our anniversary dinner that night, AKA Bistro sadly closed in St. Helena and we have yet to find a place nearby that makes these delicious appetizers. So of course we did what any avocado obsessed couple would do, we searched to recreate the avocado fries from AKA Bistro, except instead of fried, we chose a healthier version— baked!

Ingredients

  • 2 ripe avocados (you can use 3, but for the 4 of us, 2 was enough)
  • 1/2 cup of all-purpose flour
  • 1 1/2 cups of Panko breadcrumbs
  • 1 Tablespoon melted butter
  • 2 eggs
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions:


1)  Preheat oven to 450 F.

2)  Line a baking sheet with foil and lightly spray with cooking spray.

3)  Slice your avocados lengthwise

4)  Take three bowls. In the first bowl, place the 1/2 cup of flour and add a pinch of salt and black pepper.

5)  Crack the eggs into the middle bowl and beat lightly.

6)  In the last bowl, combine the panko breadcrumbs, melted butter, cayenne pepper, paprika, garlic powder, salt, and pepper and mix well.

 

7)  In an assembly line form take you avocado slices and start your process. First coat the slices in the flour, then the beaten egg, and lastly through the panko mixture.

8)  Place coated slices on your lined baking sheet and bake for 20-25 minutes, until panko is lightly browned.

I knew that we needed something to dip our avocado fries in. Not that they needed it, but we wanted something delicious to compliment the avocado. Plus, the kids enjoy dipping their “fries”. So I searched the web and found this awesome recipe for a Cilantro-Lime Ranch Dip from Tastespotting. The combination of the avocado fries and the dip are phenomenal!
