Perfect Pesto
My garden is just bursting with basil right now! With lots of basil on hand, I LOVE to make homemade pesto. I love to make a big batch of it and then freeze (pesto freezes great in ice cube trays) so I have pesto on hand all winter long!
Ingredients:
- 3 cups basil leaves
- 1 1/2 cups pine nuts
- 4 tsp. minced garlic
- 1-cup olive oil
- 3/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions:
Step 1:Â Place basil leaves, pine nuts and garlic in a food processor and pulse until finely chopped.
Step 2:Â While processing, slowly add one-third cup olive oil.
Step 3:Â Add 1/3 cup grated Parmesan cheese and mix in processor.
Step 4:Â Add salt and pepper to taste.

This recipe makes 16 servings; I always make a big batch of it and then freeze (pesto freezes great in ice cube trays) so I have pesto on hand all winter long!
