For a while now, kombucha has been a huge hit in the natural foods market. People shout its praises from the rooftops while others cringe in fear at the sight of this “moldy tea.” Back home in Santa Cruz (known to some as the hippie capitol of California), if you didn’t have kombucha in your yoga bag, you might as well be a heartless corporate puppet. For those of you who don’t hail from the sandy shores of Tie-Dye Land and aren’t sure what a corporate puppet looks like, here’s a crash course.
What is Kombucha?
According to Wikipedia, Kombucha is an effervescent tea-based beverage that is often consumed for its anecdotal health benefits or medicinal purposes. Kombucha is available commercially and can be made at home by fermenting tea using a visible, solid mass of yeast and bacteria which forms the kombucha culture, often referred to as 酵母 (kombo, lit. “yeast mother”).
Lovers of kombucha claim that it is both delicious and nutritious – and even contains detoxifying properties! You can score a bottle to try for yourself at many grocery stores these days. I’ve seen them in the more obvious places like Whole Foods, but even some Safeway and Raley’s locations are carrying varieties of the mystical liquid.
If you’re feeling really adventurous, you can even brew your own at home! Kombucha Brooklyn sells all-in-one kits for those who wish to dabble in tea fermenting. You can pick up their products in stores if you’re in the New York area or online for those of us a bit further away.
But what’s so healthy about fermented tea anyway? No one knows for sure if kombucha offers any legit health benefits, but Kombucha Brooklyn says that in addition to deliciousness, their teas are great sources of:

- Vital amino acids
- Organic acids
While I haven’t yet gotten up the courage to brew my own, that doesn’t mean you shouldn’t! They say raising a fermenting culture is like raising a baby… it takes time, effort and love.
