25 Days of Holiday Treats: Pumpkin Pecan Pancakes
I have been making these pancakes for years and they are always a hit at home. As soon as we get the first hint of fall, I start digging out my recipe and then I continue to make these throughout the holidays. These are delicious; rich and moist pancakes that are sure to please the whole family!
Ingredients
1 cup quick-cooking oats
1/2 cup flour
1/2 cup whole wheat flour
3/4 cup pureed pumpkin
1 Tbsp sugar
1/2 tsp. salt
1 egg beaten
1 1/2 cups buttermilk
2 T Vegetable oil
1 tsp vanilla
3/4 cup Pecans (and extra for topping)
Directions
- In a medium bowl, combine oats, white flour, whole wheat flour, sugar and salt.
- In a larger separate bowl, whisk the egg and add pumpkin, buttermilk, oil and vanilla.
- Slowly add the dry ingredients and the pecans, adding a little at a time until mixture is well combined.
- Coat a hot griddle with non-stick spray and pour 1/4 cup of mixture onto griddle at a time. When the pancakes start to bubble they are ready to flip— brown each side. Top with pecans serve with maple syrup. Enjoy!
