Five Things to Do with Leftover Stuffing

Ok, you’ve stuffed your face with stuffing, but you still have some left over. Now what? Here are a few quick, easy ideas to incorporate your leftover stuffing into easy week-night meals.
Stuffing cakes: This is my favorite thing to do with leftover stuffing. Mix it up with leftover mashed potatoes and form them into patties. Coat them in a light dusting of flour and fry them in a pan with a little olive oil until browned. YUM! These make a great lunch!
Thanksgiving sandwich: Grab a couple pieces of hearty white bread, add some turkey, stuffing, potatoes, gravy and even a little cranberry sauce. Thanksgiving in a sandwich—trust me, it’s delicious!
Stuffing Muffins: Add a little milk to your leftover stuffing to moisten it and press it into muffin tins for individual servings. Top with some cheddar and you have an easy snack for hungry little munchkins.
Stuffed Mushrooms: Hollow out button mushrooms and reserve the stems. Chop stems finely and mix them into your leftover stuffing with some milk. Spoon mixture into mushroom caps and top with grated Parmesan. Bake until cheese is browned.
Stuffing Casserole: You can add just about anything you want to your stuffing to create a casserole! I like to add roasted chicken, some sweet potatoes and top with cheese. Stir everything together in one bowl with some milk and an egg so it binds, then bake for about 15 minutes. Get creative with this and add whatever your family likes!
