Blackberry Coconut Birds Nest Cookies

  • ¾ Cup of Butter
  • 1 Egg
  • 2 Teaspoons of Vanilla Extract
  • ⅔ Cup of Sugar
  • 2 Cups of Flour
  • ⅓ Teaspoon of Baking Powder
  • 1½ Cups of Coconut
  • Blackberry (or any fruit flavor) Jam
  1. Preheat oven to 350 degrees.
  2. Cream the butter, egg, vanilla and sugar until well blended.
  3. Slowly add the baking powder and the flour ½ cup at a time and let it mix in before adding more.
  4. Roll dough into 1 inch balls, dipping into the coconut before placing on the baking sheet.
  5. Press your thumb into each dough ball.
  6. Spoon a small amount of jam onto each cookie.
  7. Bake for 16 minutes or until the bottoms start to brown and the coconut starts to toast.
