Sauteed Brussels Sprouts with Olive Oil and Lemon Zest
Serves: 4
  • 1 lb. brussels sprouts
  • 2 Tbs. olive oil
  • 1 tsp. lemon zest
  • ½ tsp. sea salt
  • Freshly ground pepper, to taste
  • 3 Tbs. fresh lemon juice
  1. Trim away the stem ends of the brussels sprouts and cut lengthwise in half.
  2. In a large frying pan, warm the olive oil over medium-high heat.
  3. Add the brussels sprouts, lemon zest, salt, and pepper.
  4. Cook, stirring frequently and reducing heat as needed to prevent scorching, until the brussels sprouts are tender and slightly browned (around 7-8 minutes).
  5. Stir in the lemon juice and cook for 1 minutes more.
  6. Serve immediately.
