Baked Chicken Fajitas

Simple to throw together, this baked chicken fajitas meal is sure to become a regular dish in any busy family's menu!
Ingredients
  • 1 lb boneless, skinless chicken breast, cut into strips (to save time, I bought it already cut into strips)
  • Peppers and onions (to save time, I bought frozen peppers and onions mix)
  • 2 cloves of fresh garlic (if you don't have any, substitute ½ tsp garlic powder)
  • 2 tsp chilli powder
  • Salt to flavor
  • 1 tsp paprika
  • 1 tsp crushed red pepper (optional)
  • Whole wheat tortillas
  • Guacamole, salsa, cheese, sour cream, etc... (as your family likes)
Instructions
  1. Preheat the oven to 400 degrees.
  2. Grease your pan and add the chicken strips.
  3. Combine your spices in a small bowl. Sprinkle on the chicken and mix thoroughly.
  4. Add vegetables and mix.
  5. Bake, uncovered, for 20-30 minutes, depending on the size of your baking pan. Check to be sure your chicken is cooked through.
  6. Serve on tortillas with yummy toppings!
