Looking for a healthy snack to celebrate St. Patrick’s Day with your kids? Try making some fruit art to create a rainbow with a pot of gold! This plate is perfect for kids’ parties—your kids will love to help you make this food art. Try not to eat all the yummy fruit before serving!
Rainbow Ingredients:
- 1 cup red seedless grapes
- 1 ½ cup blueberries
- 1 ½ cup kiwi fruit—peeled and sliced
- 2 cups sliced pineapple
- 3 cutie oranges (peeled)
- 2 cups sliced strawberries
- 1 ripe banana—sliced
Dip Ingredients:
- 2 oz 1/3-less-fat cream cheese (Neufchâtel), softened
- 1 container (6 oz.) low fat vanilla yogurt
- 2 tablespoons powdered sugar
- 2 tablespoons frozen orange juice concentrate
- 1/2 teaspoon vanilla extract
- 1/2 cup marshmallow puff
- Food coloring (yellow and just a bit of red)
Rainbow Directions:
Step 1. Wash, peel and slice fruit.
Step 2. Arrange fruit on a plate to represent a rainbow in the following order from bottom to top: red grapes, blueberries, kiwi, pineapple, oranges and strawberries. Place bananas on bottom left side of rainbow to make it look like a cloud.
Dip Instructions:
Step 1. Mix together cream cheese, yogurt, powdered sugar, orange juice concentrate, vanilla and marshmallow puff in a small bowl.
Step 2. Add food coloring to make the dip look like a pot of gold (a few drops of yellow and just one drop of red is what I used).
Step 3. Put dip in a small serving bowl and place at the bottom of the rainbow for your pot of gold! (There will be extra dip, but save for later).

Love the rainbow idea, but the sugary dip with artificial color ruins it for me. I’d use a plain nonfat yogurt sweetened with honey and I think it’d be just as good.
