I absolutely love artichokes and am always looking for a good recipe that includes them. I love them prepared any way, but I especially love them stuffed! Don’t be discouraged to make these because they look fancy—you certainly won’t have to slave for hours in the kitchen. They are actually quite easy to make and are very “hands off” so you will be able to cook the rest of your dinner while these delicious artichokes are cooking.

Ingredients (serves 2):

    • 2 large artichokes
    • 2 tbsp. butter (chopped into small pieces)
    • ½ cup Parmesan cheese
    • ¼ cup Italian bread crumbs
    • 2 tbsp. chopped fresh oregano
    • 2 tbsp. chopped fresh basil

Directions:

Step 1. Turn oven to the low broil setting.

Step 2. Chop off stems and top quarter of each artichoke. Use scissors to cut any outer leaves that have sharp edges.

Step 3. In a large pot, boil artichokes for 10 minutes to soften them.

Step 4. Meanwhile, combine bread crumbs, half of the Parmesan cheese, butter, oregano and basil in a small mixing bowl.

Step 5. Place artichokes in a baking dish and sprinkle bread crumb mixture on top of each artichoke. Divide the rest of the Parmesan cheese and sprinkle on top of each artichoke.

Step 6. Broil on low for three to four minutes or until cheese turns golden brown. Serve immediately.
