This French toast casserole is very easy and can be prepared ahead so all you’ll have to do in the morning is pop it in the oven!  It’s great for Christmas morning—breakfast will be well on its way while you watch your kids open presents!

As this French toast is rich and decadent, you can add syrup if you like, but it certainly isn’t necessary. We added bananas to our casserole but you can add any fruit you like!

Ingredients

French Toast:

  • 1 (1 pound) loaf French bread, cut diagonally in 1-inch slices
  • 8 eggs
  • 2 cups half and half cream
  • 3/4 cups sugar
  • 2 tablespoons vanilla extract

Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 1 stick cold butter, cut into pieces
  • 2 bananas, sliced

Directions

Step 1. Grease 9 x 13-inch baking pan with butter. Tear bread into chunks (or cut into cubes) and evenly distribute in the pan.

Step 2. Mix together eggs, half and half, sugar, and vanilla. Pour evenly over bread. Cover tightly and store in the fridge overnight.

Step 3. In a separate bowl, mix flour, brown sugar, cinnamon, salt and butter pieces. Mix together well, place in a Ziploc bag and store overnight.

Step 4.  The next morning, preheat oven to 350 degrees.

Step 5.  Slice bananas and place on top of bread mixture. Sprinkle mixture from Ziploc bag onto bread mixture and bananas.

Step 6. Bake for 45 minutes for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture.
