Lasagna Toasts—A Summer Spin on a Winter Classic

My favorite comfort food is lasagna, but I never want to make it in the summer because I don’t want to slave for an hour in front of a hot stove and oven. I found a similar recipe to this on Pinterest and decided to try my own. They came out great and the whole family loved them! These lasagna toasts are a perfect summer lunch or dinner, or they can even be served as a fun appetizer for a barbeque.  This is one of our favorite dinners in the summer; it is filled with delicious veggies and only takes 15 minutes to make—perfect for a quick weeknight dinner!
