- 2 tablespoons sugar
- 1/2 cup balsamic vinegar
- 3 large, fresh peaches with peel, halved and pitted
- 1/2 cup feta cheese, crumbled
Step 1. Wash and cut peaches in half; remove pits
Step 2. In a medium saucepan, heat sugar and balsamic vinegar. Stir frequently until sauce is reduced by about half and has a thicker consistency.
Step 3. Coat grill with non-stick spray (do this before you turn on grill). Turn grill on to medium heat.
Step 4. Place peaches cut side down onto grill and grill for four or five minutes, or until flesh has softened.
Step 5. Flip peaches and brush the top side with balsamic glaze. Sprinkle crumbled feta cheese on top of peaches.
Step 6. When cheese is slightly melted, remove from grill and drizzle rest of balsamic glaze onto peaches. Serve hot.
