It’s not often that I can literally put two ingredients together and get an incredibly delicious, healthy and hearty meal. I have been obsessed with the idea of cooking an egg inside an avocado- after all, those two go so well together.

This breakfast is packed with omega-3s and high protein to start your day off right.

Eggs AvocadoEggs Baked in Avocado

  • 1 Avocado
  • 2 Eggs
  • Fresh Herbs or Seasoning (Optional)
  • Sriracha (Optional)

Preheat oven to 425. Slice avocado in half and scoop out about 2 tablespoons of avocado from the center. Place avocado tightly inside a baking dish. Crack egg into each avocado half. Bake for 15 to 20 minutes, depending on the size of your eggs and avocados. Remove from oven and top with your choice of seasoning and hot sauce.
