Chicken Salad Bites

These appetizer bites are the perfect compliment to any party!

I first had them at a friend’s daughter’s first birthday party and my husband and I were obsessed with them! My friend gave me the recipe and I recently used the recipe at a girls night party with rave reviews!

It’s a really simple recipe without any exact measurements.

You will need:

Chicken, Cooked and Shredded
Filo Dough Cups
Celery, Chopped
Green Onions, Sliced
Almonds (optional)
Salt
Pepper
Mayonnaise

*For the cooked chicken, I boiled a few chicken breasts in water, but you can use rotisserie chicken too!!

*Filo Dough Cups are found in the grocery store in the frozen dessert aisle…these things are perfect for ANY appetizer, you just thaw them and fill them!

Mix Chicken, Celery, Green Onions and Almonds in a bowl. Add Mayonnaise (start with a little bit) until you get your desired consistency. I prefer a little bit of Mayo, but some people like a lot, so use what you prefer. Season with salt & pepper, then scoop little bits of the chicken salad into the individual Filo Cups (thawed), then serve!
