Do you ever become obsessed with a certain food or vegetable for a period of time? You find yourself including it in dinner menus every week, constantly searching for new ways to use it; and all the while praying that no one at the table asks when your love affair will end. Well, we have been eating cauliflower baked, grilled and mashed for months now, and I’m still ready for more! This cauliflower pizza crust is the first thing I haven’t done with this vegetable yet. So, I gave it a try last night for dinner and it received rave reviews from my husband and two little boys!

Using your food processor, chop all of the cauliflower down to a fine powder.

Making Cauliflower Crust

Microwave the cauliflower for approximately 10 minutes. Using a tea towel, squeeze out all excess liquid from the cauliflower. The dryer your mixture, the crispier your crust! Then, place the cauliflower in the fridge to completely cool. This takes about 15 minutes.

Once Cooled, mix in the parmesan cheese, egg, garlic, salt and pepper. Hands work best for this step; you’re creating a ball of dough! Press and shape the dough mixture onto a pizza stone or baking sheet and bake for 15-20 minutes at 450 degrees until it’s golden brown.

Top with your choice of toppings and stick back into the oven until cheese is melted.

  • Crust:
  • ½ head cauliflower, coarsely chopped
  • ½ cup grated parmesan cheese
  • 1 egg or egg substitute equivalent
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Toppings:
  • extra virgin olive oil
  • tomatoes
  • basil
  • mozzarella cheese shredded

  4. Preheat your oven to 450 degrees
  5. Remove the cauliflower from the fridge and mix in the parmesan cheese, egg, garlic, salt and pepper. Hands work best for this step; you’re creating a ball of dough! (see photo)
  6. Press and shape the dough mixture onto a pizza stone or baking sheet and bake for 15-20 minutes until it’s golden brown.
  7. You’re ready for the best part—the toppings!
  8. Place back into oven until cheese is melted and enjoy!

 

In order to keep this recipe a vegetable for our meal, I chose to only use EVOO, tomatoes, basil and a bit of cheese, but you can add anything you normally would on your favorite pizza for the whole family. I think next time I will add the boys’ favorite pepperoni and cheese. Maybe that will allow me a few more cauliflower-packed meals before the complaints begin?
