For my daughters 5th birthday she wanted a Rainbow Dash Birthday Cake. I was so excited to make this cake, I have been waiting for an excuse to try it out and share!

I made my white cake from scratch and it was very easy.

Rainbow Dash Birthday Cake

Ingredients
  • 1 cup white sugar
  • ½ cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • ½ cup milk
Instructions
  1. I doubled the recipe for this cake as it was made for 15 children.
  2. preheat oven to 350 degrees . Grease and flour a 9×9 inch pan
  3. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
  4. Bake for 30 to 40 minutes in the preheated oven. Cake is done when it springs back to the touch.

I then divided the cake mix into 6 different bowls. I made each bowl even by scooping one cup of batter in each bowl at a time until I ran out. You can then pick out your colors and I put 5 drops of food coloring in each bowl and stirred until I reached the desired color. You can do more or less depending on the brightness you would like.

After the cakes are finished you will want to start stacking them on top of each other. To make them stay in place I covered each layer with a scoop of frosting. I purchased the frosting at my local grocery store because I was on a time limit, but I would normally make my own.

This is called a crumb coat. It is best to cover the entire cake in a thin layer of frosting and then put in the freezer so it sets together and doesn’t fall apart. I used a wilton cake spatula for this and it works great, though you can also use a butter knife and this also works well. I let this set in the freezer for one hour before I put the final frosting coat on. I needed two packages of frosting for the size of this cake.

Don’t worry if the cake cracks or any pieces look unstable this will all come together once the crumb coat is complete. I then layer the cake with one more final coat and then decorate.

Because this was a rainbow dash cake I decided to use Skittles, one of my daughters favorite candy’s. I sorted out the colors first and then layered then across the cake in rows. The rainbow sprinkles and candles were also purchased from my local Michaels crafts store. To top the cake off I purchased a small Rainbow Dash My Little Pony figurine from Amazon to place on top. Whenever I make a themed cake, such as Mickey, Toy Story or this Rainbow Dash Cake, I always add a figuring on the top. I am not great with fondant and I feel that it really brings the cake together and makes it look SO much more fantastic.

When you cut open the cake you will be able to see all of the layers. This cake was so much fun and probably my daughters favorite yet! I am a huge fan of making your own cakes, don’t worry if you are no Martha Stewart, this cake is easy for everyone!
