One of the most helpful tips I can offer busy moms is to find meals that can be prepared early in the day, and then just popped in the oven before dinner. So yesterday, I got started early.  During nap time, I chopped all of the veggies and roasted them. I prepared the sauce and the pasta, and then I put everything into the dish I’d be baking it in, and I put it in the refrigerator until it was time to put it in the oven. This allowed me to focus only on my children for the rest of the afternoon! (Well, my children and the mounds of laundry that never seem to go away!) Plus, my 19-month-old veggie hater LOVED it!

Ingredients:

  • 1 small white onion, diced
  • 1 red bell pepper, diced
  • 2-3 cups broccoli, chopped
  • 1/2 cup carrots diced
  • 1 garlic clove, minced
  • 1 jar alfredo sauce
  • 3 cups bow tie pasta
  • 1/4 cup Parmesan cheese
  • 1/2 cup white wine
  • 1 tablespoon butter (optional)

Step 1: Preheat oven to 400.

Step 2: Spread veggies evenly on a baking sheet, add salt and pepper.

Step 3: Bake veggies for about 20 minutes.

Step 4: While veggies are baking, boil pasta until al dente (still a little firm). Drain, and add to a baking dish.

Step 5: Add jar of Alfredo sauce, wine and butter to a sauce pan. Bring to a boil, and remove from heat. Stir the sauce.

Step 6: When the veggies are done, spread them over the pasta in the baking dish.

Step 7: Pour the sauce over the veggies and pasta, and stir until evenly coated.

Step 8: Cover with foil and refrigerate until about 45 minutes before you want to serve the meal. Remove from refrigerator, preheat oven to 350, and bake for 30 minutes covered.

Step 9: Remove foil, add cheese and bake uncovered until cheese is melted.
