Some nights, the name of the game is EASY when it comes to dinner. I have a stash of simple recipes for super busy days when I want to avoid falling into the trap of going out to eat. This is one of my favorites!

This recipe is quick, easy and a kid-favorite. It’s great for a week-night dinner with a side of broccoli and sweet potato fries or serve them up as party food. With barbecue and picnic season upon us, this is a nice dish to serve kiddies who aren’t quite ready to tackle ribs on the bone. You’ve already got your barbecue sauce out, after all!

Ingredients

  • 1 lb. ground turkey
  • ¾ cup barbecue sauce
  • 2 packages refrigerator biscuits (I used Pillsbury Grands)
  • 4 oz shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste

* This recipe can be customized to your family’s tastes. For example, diced carrots and onions sautéed in butter and tossed in with the turkey are a good way to add veggies to this recipe. Red meat lovers in your family? Use ground beef instead of turkey.

Directions

1. Preheat oven to 400 degrees.

2. Spray muffin tins with cooking spray and press biscuits in, forming a cup.

3. Heat skillet and add olive oil.

4. Brown turkey in olive oil with salt and pepper.

5. When turkey is done, add barbecue sauce and garlic powder on low heat. Mix until meat is thoroughly coated in sauce.

6. Spoon meat into biscuit cups, packing it in tightly (approximately two tablespoons per cup).

7. Sprinkle cheddar over each cup and bake about 12 minutes or until biscuits are golden brown.

Note: If you use the Grands biscuits, you will make 16 cups. If you use regular-sized biscuits, you will make 24 cups and spoon less meat into each cup.
