Looking for a new twist on the classic fruit salad? Try this Balsamic Vinaigrette Fruit Salad. It’s light and delicious, and you can have it ready in just about 10 minutes! You can use other fruits if you like, but I like this combination best. This recipe is perfect for a summer dessert!

Ingredients:

  • 1 cup orange juice
  • 1 ½ tablespoons sugar
  • 1 ½ balsamic vinegar
  • 1 ½ cups blueberries
  • 3 cups fresh sliced strawberries
  • 2 large ripe peaches, cut into wedges
  • ¼ cup fresh mint leaves

Directions:

  1. Combine orange juice, sugar and balsamic vinegar in a small saucepan. Bring to a boil and stir with a whisk frequently.
  2. Simmer about 10 minutes (don’t forget to keep stirring) and liquid will reduce by half.
  3. Remove from heat and let sit for two minutes to cool.
  4. Meanwhile, mix the fruit and mint leaves together and place in a bowl or shallow serving platter.
  5. Pour sauce over fruit mixture and enjoy!
