As a mom on the go, I am always trying to make up quick, easy recipes. And when I mean quick and easy, I mean really easy. I’m sure most of you can relate when I say that I don’t have much time to spend cutting veggies while my toddler runs circles around me!

This recipe for chicken fajitas is perfect for my family—easy, yummy and customizable to your family’s tastes. For example, I used peppers, onions and corn in my recipe, because my daughter loves corn in everything! But if your family doesn’t like corn, just skip that ingredient! No one in my family cares much for tomato slices, but this recipe would probably be great with some tomatoes if you like them! Same with the spices—if your family loves spicy food, add some extra chili powder. But if not, lay off the chili powder! It’s as simple as that.

Here’s what you need:

  • 1 lb boneless, skinless chicken breast, cut into strips (to save time, I bought it already cut into strips)
  • Peppers and onions (to save time, I bought frozen peppers and onions mix)
  • 2 cloves of fresh garlic (if you don’t have any, substitute 1/2 tsp garlic powder)
  • 2 tsp chilli powder
  • Salt to flavor
  • 1 tsp paprika
  • 1 tsp crushed red pepper (optional)
  • Whole wheat tortillas
  • Guacamole, salsa, cheese, sour cream, etc. (as your family likes)

Simple to throw together, this baked chicken fajitas meal is sure to become a regular dish in any busy family's menu!
Ingredients

Instructions
  1. Preheat the oven to 400 degrees.
  2. Grease your pan and add the chicken strips.
  3. Combine your spices in a small bowl. Sprinkle on the chicken and mix thoroughly.
  4. Add vegetables and mix.
  5. Bake, uncovered, for 20-30 minutes, depending on the size of your baking pan. Check to be sure your chicken is cooked through.
  6. Serve on tortillas with yummy toppings!
