Cauliflower Pizza Crust
  • Crust:
  • ½ head cauliflower, coarsely chopped
  • ½ cup grated parmesan cheese
  • 1 egg or egg substitute equivalent
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Toppings:
  • extra virgin olive oil
  • tomatoes
  • basil
  • mozzarella cheese shredded
  1. Using your food processor, chop all of the cauliflower down to a fine powder. (see photo)
  2. Microwave the cauliflower for approximately 10 minutes. Using a tea towel, squeeze out all excess liquid from the cauliflower. The dryer your mixture, the crispier your crust!
  3. Place the cauliflower in the fridge to completely cool. This takes about 15 minutes.
  4. Preheat your oven to 450 degrees
  5. Remove the cauliflower from the fridge and mix in the parmesan cheese, egg, garlic, salt and pepper. Hands work best for this step; you’re creating a ball of dough! (see photo)
  6. Press and shape the dough mixture onto a pizza stone or baking sheet and bake for 15-20 minutes until it’s golden brown.
  7. You’re ready for the best part—the toppings!
  8. Place back into oven until cheese is melted and enjoy!
